On new year’s eve the Swiss stick to their habits noted the German-language newspaper Blick while doing the rounds of Swiss department stores.

However the choice of meats is not universal across all of Switzerland. A third of French-speaking Swiss eat fish while another third eat turkey or duck. Swiss german speakers on the other hand prefer pork according to a press release by the Swiss supermarket Coop. Only 10% of German-speakers eat fish and 5% turkey.

One thing seems to prevail regardless of the language spoken. The meats bought usually find their way into a boiling broth, a ritual known as chinese fondu. Like cheese fondu the table shares a pot, but instead of forks armed with bread or potato, diners are equipped with small wire baskets which are loaded up with meat and vegetables and then submerged into the hot soup to cook.

The Swiss have developed their own variant of this chinese dish called huÇ’guō – the chinese characters (火鍋) literally translate to fire pot. However, while flavours and ingredients differ the basics are universal: cook raw meat, seafood and vegetables in a hot soup.
